Ancient organic spelt is a highly nutritious complete protein from the old world. It fell out of favor with modern farmers because of its difficulty in post-harvest cleaning and the lack of knowledge and subsequent loss of demand from American consumers. 

WHY IT'S OUR FAVORITE:
Unlike modern wheat, spelt is a complete protein that still retains its original genetic structure that enables a water soluble protein, making it easy to metabolize. It is rich in fiber, protein, and essential nutrients like iron, magnesium, and B vitamins. 

The grain has a genetic disposition to express a dominant nutty flavor that is slightly sweet regardless of where the crop is grown. When baked, it produces a firm crumb, making it a favorite in bread, pizza, and whole-grain dishes.
