One of our team's favorites. Emmer is an extraordinary grain known for its dominant graham cracker aroma and wide range of applications. Known in Italy as "Farro Medio," this ancient varietal is an excellent choice for whole grain breads, pastas, and risotto. As the ancestor of Durum wheat, Emmer is a high-protein, low-glycemic and vitreous grain (glass-like) making it ideal for pasta production. As a bonus, its red hue and graham cracker taste make it ideal for bolstering flavor and color in your sourdough loaves above all other grain varietals. We suggest substituting up to 40% of your sourdough recipe with finely-milled Emmer to add exceptional color, texture, nutrition' and aroma that you just can't beat.
